Spinach Artichoke Gnocchi
I dont know about ya’ll but I love me some spinach artichoke dip! Alot of times it can be pretty heavy but they do have some that are not that bad. The one from Trader Joe’s is really tasty and not too heavy so I decided I wanted to make a nice little protein packed dish with it. Enter ‘Jane’s Spinach Artichoke Gnocchi’. . . .
3 Ingredients: Chicken, Spinach and Artichoke Dip, and Gnocchi (I chose cauliflower instead of potato)
Ive never cooked Gnocchi at home before. I boiled it and then threw it in a pan with some oil to brown and crisp up.
I cooked my chicken in the Airfyer by dicing it up, tossing in olive oil and cooking @375 for 10 mins. . stiring then cooking for another 10 mins. Came out great and I added it to the Gnocchi.
Now for the delicious dip. I heated it in the microwave and threw allll the deliciousness into the pan.
This meal was so good and Macros were great at 34gms of Protein, 24gms of Carbs, and 12gms of fat. 🙂
Jane’s Spinach Artichoke Gnocchi
INGREDIENTS
- 1 large or 2 small chicken breast(s)
- 1 bag of Trader Joes Cauliflower Gnocchi (or whatever brand you like)
- 1 container of Trader Joes Spinach Artichoke Dip (or whatever brand you like)
INSTRUCTIONS
- Boil Gnocchi on the stove until the pieces float to the top (about 5 mins or so)
- Cut chicken into cubes, toss in olive oil, and place in Airfryer @ 370 for 10 mins, stir when done and cook another 10 mins.
- Heat the Spinach Artichoke dip and stir all above ingredients together.
- Enjoy!
