Cauliflower Fried “Rice”

Hi Everyone! I know Cauliflower rice isnt anything new or rare but I really never tried it or was interested in cooking it. Why? Because Ive made Cauliflower mashed potatoes before, and although they are good, they still have that Cauliflower taste. Thinking about eating bits of tiny cauliflower in place of rice sounded gross.

Well I had a friend bring me some fried Cauliflower rice recently and I couldnt believe my taste buds! I couldnt tell the difference, it tasted like fried rice. . .say what?!

So she told me that the secret was to put it in a pan by itself and let it simmer until all the moisture left. So thats what I did. Below is my version of cauliflower rice using my friends “de-moisture” technique.

As you can see the Left is a raw picture and the right is when it is browning and the moisture has left. This takes about 20 mins, frequently turning.

Next I make a hole in the middle and added some sesame oil, then mixed it up.

Then beat a couple eggs, make another hole, and pour into the center. cook in the center and then mix into the rice.

Next add a can or frozen bag of mixed veggies and some soy sauce

Stir and let cook for 5 more mins and your done. mmmmmm so good and tastes just like rice! It even kinda looks like rice.

Cauliflower Fried “Rice”

INGREDIENTS

  • Cauliflower rice
  • 2 eggs
  • Sesame oil
  • Soy Sauce
  • Mixed veggies (1 can or 1 bag frozen)

DIRECTIONS

  1. Heat cauliflower rice in a pan over medium heat until brown, about 20 mins.
  2. Make a hole in the center of the rice and add 1 TBS of sesame oil. Stir into rice
  3. In a separate bowl, beat two eggs. Pour into hole in center of rice and cook.
  4. Once eggs are cooked, stir into rice.
  5. Add 1 can or 1 bag of mixed vegetables into mixture and stir together.
  6. Add 2 TBS of soy sauce, stir, and simmer for 5 mins.
