Protein Breakfast Sandwiches

I was in desperate need of something different for breakfast! Also something that was high in protein and going to keep me full longer.

I really like breakfast sandwiches but they are quite heavy when you buy one at a fast food place. So I made my own.

First I made my eggs. I used egg whites, baked them in a pyrex @ 350 for 20-30 mins and cut into nice squares to fit in a sandwich. These taste better than buying them frozen for sure. There is about 15gms of protein in each square.

What am I using for the bread you ask? Well I was very excited to grab some of these protein Kodiak cakes. I got blueberry but they have plain and chocolate chip too. these have 12gms of protein for 2 and only 25 carbs. Not bad for waffles.

I threw some turkey bacon in the air fryer and now we are ready to create our sandwiches!

  1. Toast the waffles and add the egg

2. Add your cheese (I used swiss) and bacon

Put together and ta da!

I wrapped these up and have been grabbing and reheating for 1 min in the microwave. They are so good and very filling. Compared to a Mcdonalds mcgriddle, which is way smaller, the nutrition info is pretty good. If your looking for a lower fat option, dont add cheese. ๐Ÿ™‚

I will definitely try this minus the cheese since I canโ€™t do dairy. Sounds so yummy! Thanks, Jane!
